1.5 lbs chicken thighs or breasts, cubed

2 tbsp butter

1 large onion, finely diced

3 garlic cloves, minced

1 tbsp fresh ginger, grated

1 cup tomato puree or canned tomato sauce

1 cup heavy cream or coconut cream

1 tsp garam masala

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp turmeric

1/2 tsp paprika

1/4 tsp chili powder (optional, for heat)

Salt to taste

Fresh cilantro (for garnish)

Instructions

1. Prepare the Chicken:

In a skillet, melt 1 tbsp of butter over medium heat.

Sear the chicken cubes until lightly browned (about 5 minutes). Set aside.



2. Cook the Aromatics:

In the same skillet, add the remaining butter and sauté the onion until soft and golden.

Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.



3. Add the Spices:

Mix in garam masala, cumin, coriander, turmeric, paprika, and chili powder. Stir for 30 seconds to release the aroma of the spices.



4. Make the Sauce:

Pour in the tomato puree and simmer for 5 minutes.

Add the cream, stirring until the sauce is smooth and creamy.



5. Combine Chicken and Sauce:

Return the chicken to the skillet and let it simmer in the sauce for 15-20 minutes, or until the chicken is fully cooked.



6. Serve:

Garnish with fresh cilantro and serve with basmati rice, naan, or roti.
